Mindy Yap - Food Intercept

My enterprise project

My enterprise achievement

Food Intercept is a social enterprise with a mission to reduce the amount of perishable waste within local communities around Coventry.

We connect Coventry market vendors to local charities and soup kitchens. Also, we use surplus and bruised fruit for our small catering scheme in Canley that teaches young adults with learning disabilities how to bake.

I’ve always been passionate about environmental issues. Being a part of ENACTUS gave me the opportunity to dig deeper and find a sustainable solution to reduce fresh food waste.

With the award, I was able to purchase a food processor and baking equipment for the team. At the start, we were fortunate to have kind flatmates who lent us their blenders and cake mixers. But I wanted the team to have a set of equipment they could use next year.

Besides the essentials, I was also able to purchase an ice cream maker and a fruit and veg dehydrator! This equipment will enable the team to experiment with new recipes (according to seasonal produce) and extend our catering range to fruit based ice creams and vegetable crisps next year.

My enterprise learning

My future enterprise

I have learnt a lot about the wider issue of reducing environmental waste and am inspired by creative ‘food surplus entrepreneurs’ all over the world who are working towards the same goal.

My advice is this: act on your curiosity and find the answer! Getting out of your comfort zone and asking questions may be scary at first, but it helped me understand the context and solve problems within my community.

After graduating this summer, I look forward to handing the enterprise to a new team with fresh ideas. I am excited to see the impact that Food Intercept can make this year!

This experience while at university has inspired me to take on the challenge of starting a desserts catering business with my friends in the UK. I hope the University of Warwick continues to support us in this new venture!
