Module content and teaching

Principal aims

The primary aim of this module is to provide a knowledge base governing the legal requirements for food sampling, analysis and reporting, as applied by a range of regulatory bodies and primary food manufacturers. These include food examiners, public analysts, local government enforcement scientists and technical staff from the food industry.

Principal learning outcomes

A broad knowledge and understanding of the fundamental principles of sampling, analysis and reporting in relation to food safety and public health microbiology; Recognise and analyse the problems associated with sample collection to defined legislative requirements; Interpret sample analysis results according to defined legislative requirements; Participate in a multi-disciplinary approach to food sample analysis involving a range of enforcement and regulatory agencies; Understand the principles of sample documentation to defined public health guidelines and legislative requirements; Be aware of the issues arising from breaches of quality standards and required actions involved in food poisoning outbreak scenarios; Demonstrate an understanding of national and international surveillance strategies pertinent to food safety.
