Module content and teaching

Principal aims

The primary aim of this module is to detail the legal process by which a breach in food safety can be addressed under UK and EC regulations. The module will address food safety enforcement issues using appropriate codes of practice and regulatory guidelines.

Principal learning outcomes

Demonstrate detailed knowledge and understanding of the pertinent EC and UK legislation governing food, water and environmental safety with special emphasis on microbiological safety; Recognise and analyse the problems associated with food production; Recognise the underlying principles associated with food sampling and interpretation of microbiological results; Understand the role of a multi-disciplinary approach to outbreak analysis and epidemiological study; Have a thorough understanding of microbiological criteria as currently defined by food enforcement agencies and food examiners; Be aware of the issues involved in safe food preparation by both large and small manufacturers; Recognise the importance of education, multidisciplinary interaction and research for the future development of food safety examination and enforcement; Demonstrate an understanding of national and international surveillance strategies pertinent to food safety.
