Paraphrasing is like a comma in a sentence, whereas summarising is like a full stop. Summarising brings together a bigger chunk of information. Often, where there are many things and much confusion, or when things seem overwhelming you, as mentor, can help by listing the key points you have heard.

"I've heard you say there are several things you are working on. One... Two... Three..."

These could be listed on the fingers of one hand or you may agree to list them on a piece of paper.  This will depend on the way in which your mentee likes to work. Are they predominantly visual, auditory or kinaesthetic in the way that they process information?
