Rice, Pasta, Potatoes

These simple and easy recipes cover the basics! These recipes can be paired with any protein and vegetable of your choosing to create a balanced and healthy meal Alternatively, they can be used in conjunction with any of the recipes already in our Student Cookbook.

Rice

  • Uncooked Basmati/ Long Grain Rice
  • Cooking/Olive Oil
  • Salt

Method

Preparing your rice

  1. Put your desired amount of rice into a sieve (1 cup of rice is usually good for two servings)
  2. Rinse your rice under cold water until the water runs clear
  3. Then tip the cleaned rice into a saucepan
  4. Add water to the rice, at a 1:2 ratio of rice to water (e.g. for 1 cup of rice add 2 cups of water).

Cooking your rice

  1. Put the rice on a high heat until the water comes to a boil. Once it is boiling add a pinch of salt and a teaspoon of oil then immediately reduce to a low heat.
  2. Cover the pan with a lid and leave this to cook for approximately 20-25 minutes.
  3. Leave the lid on for the entire time to allow the rice to steam. Once cooked use a fork to mix the rice - it should be perfectly fluffy and ready to enjoy!

Pasta

  • Any pasta shape
  • Salt
  • Olive oil (if you want to meal prep)

Method

Cooking your pasta

  1. Fill up a saucepan with water and add a pinch of salt. Put on a high heat and leave till this comes to a boil.
  2. Once the water is boiling add your desired amount of pasta (more if you want to meal prep). Boil as per the pasta packet instructions but usually for 10-12 minutes. You can give it a mix halfway through to ensure it doesn't stick together.
  3. Once your pasta is cooked, remove from the heat and drain with a sieve or colander. It's now ready to serve!

Extra tip for meal preparation

  • Add a splash of olive oil to the cooked pasta to stop it from sticking together when you store it!

Seasoned Potatoes

  • Potatoes of your choice (Maris Piper or Red Skin potatoes are recommended)
  • Olive Oil
  • Seasonings (Garlic powder, paprika, salt and pepper)

Method

Preparing your potatoes

  1. Pre-heat your oven to 180 degrees
  2. Start by selecting your desired amount of potatoes (or more if you want to meal prep!)
  3. Peel your potatoes, using a peeler (this is safer and easier than a knife!)
  4. Chop your potatoes into small pieces. You can do whatever shapes you like - cubes, wedges or chips. Just make sure your pieces are not too big and are similar sizes so they cook thoroughly and evenly.
  5. Add your potatoes to a bowl and pour in 1 tablespoon of olive oil. Sprinkle over a teaspoon of garlic powder, paprika, salt and pepper. Using your hands massage the oil and seasonings evenly across your potatoes.

Cooking your potatoes

  1. Put your potatoes onto a baking tray and spread them out so they don't overlap.
  2. Cook in the oven for 20-25 minutes and shake them halfway through to ensure all sides of the potatoes are cooked.
  3. Your potatoes are now ready to serve!
