Banana Bread

4 ingredients from your cupboard, all in one bowl, and so easy to make! This is a great way to use up bananas to save on food waste.

Ingredients

  • 3 ripe bananas
  • 1 cup of peanut butter
  • 2 Eggs
  • 1 teaspoon baking powder
  • 1 teaspoon butter
  • Optional: cinnamon, honey, chocolate chips

Method

  1. Preheat the oven to 180 degrees.
  2. Add the bananas to a bowl and mash them with a whisk or fork.
  3. In a separate microwave-proof bowl, add the peanut butter and the butter and microwave until it's melted.
  4. Add the eggs and baking powder to the melted butter and whisk well. At this point, add any seasonings. I added cinnamon and honey. Also, add your mashed banana.
  5. Stir all the ingredients well and add the chocolate chips if using. Using a spatula, gently mix everything well and pour into a well-greased baking tray or dish.
  6. Top with some more chocolate or sliced banana and bake for 40-50 minutes.
  7. Enjoy your delicious Banana Bread!
