Bobotie
Bobotie is a classic South African comfort food. It’s mildly sweet, warmly spiced, and typically served with yellow rice and chutney.

Ingredients
- 600g beef/lamb/vegetarian mince
- 2 onions
- 1 tablespoon of mild curry powder
- 1 slice of white bread (crusts removed)
- 250ml milk
- 1 1/2 tablespoons sugar
- 1/2 tablespoon black pepper
- Salt
- 1 tbsp tumeric
- 25ml vinegar or lemon juice
- 1 handful of raisins
- 2 medium eggs
- 6 flaked almonds
- 2 bay leaves
- 2 medium eggs
- Vegetable oil
Method
- Preheat the oven to 180 °C
- Heat a splash of vegetable oil and add the diced onions to the pan. Sprinkle some salt on the onions and soften them in the hot oil.
- Once the onions are soft, add your chosen mince and fry until cooked.
- Soak the slice of bread in a little of the milk and mash with a fork.
- Mix the mince, fried onions, one of the eggs, the mashed bread, raisins, almonds, turmeric, salt, sugar, black pepper and vinegar/lemon juice together and add to an ovenproof dish.
- In a separate bowl, beat the second egg, curry powder and remaining milk. Pour this egg mix over the mince mix. Add the bay leaves to the top of the egg mix.
- Bake the dish in the oven for one hour until the egg is set.
