Chicken Fried Rice
This dish takes a bit more effort but it's a great alternative to the cost of a takeaway!

Ingredients
- 1 chicken breast
- Long grain or basmati rice
- 1 medium onion (diced)
- Cooking oil
- 1 tablespoon soy sauce
- 1 tablespoon honey
- Frozen mixed veg
- 2 tomatoes (chopped)
- 2-3 medium eggs (beaten)
- Seasonings: garlic powder, onion powder, paprika, turmeric, chilli flakes and salt
- Optional: Spring onion and sesame seeds
Method
- Start by making your rice (see Cooking 101: Rice, Pasta, Potatoes)

Chop up your chicken into small pieces and season it with 1 teaspoon of each of the following: garlic powder, onion powder, paprika, and turmeric. Add salt and pepper to taste.

Cook the chicken in a frying pan until it is cooked (the inside of the chicken will be piping hot to the touch and will have turned white)

Once it's cooked, remove from the pan and put to one side for later
- Add a teaspoon of oil to the plan and your diced onion and fry till it is translucent.
- Add your frozen veg and tomatoes (and any other veg you want to add!)
- Season the vegetables with the soy sauce and honey and then add 1 teaspoon each of chilli flakes and garlic powder.
- Once the vegetables are almost cooked move them to the side of the pan and add your eggs. Scramble until they're cooked.
- Add the cooked chicken and stir for a few minutes to reheat.
- Add the rice in batches and stir to combine.
- Optional: add chopped spring onion and sesame seeds as a garnish.
