Ingredients

  • Long grain or basmati rice
  • Chicken breast
  • Medium onion - diced
  • Cooking oil
  • Soy sauce
  • Honey
  • Frozen vegetable mix and fresh tomatoes
  • 2-3 medium eggs - beaten
  • Seasonings: garlic powder, onion powder, paprika, tumeric, chilli flakes and salt
  • Optional garnish: spring onions and sesame seeds

Method

  1. Prepare your rice as per the packet instructions.
  2. Chop up your chicken into small pieces and season it with 1 teaspoon each of the following: garlic powder, onion powder, paprika and tumeric. Add salt and pepper to taste.
  3. Cook the chicken in a frying pan till it is cooked through. Once it's cooked, remove it from the pan and put it to one side for later.
  4. Add 1 teaspoon of oil to the pan and add the diced onion. Fry it until it is translucent.
  5. Next, add your frozen mixed vegetables and two chopped-up tomatoes. Season the vegetables with 1 tablespoon of soy sauce, 1 tablespoon of honey and one teaspoon each of chilli flakes and garlic powder.
  6. Once the vegetables are almost cooked, use a spatula to move the vegetables to one side of the pan and add 2-3 beaten eggs to the empty space made in the pan. Scramble the eggs till they are cooked.
  7. Once your rice is cooled, you're ready to assemble the rice!
  8. Combine the cooked chicken into the vegetable and egg mixture to ensure everything is heated through.
  9. Once the vegetables, egg and chicken are combined, slowly add the rice and stir till all the rice is mixed in.
  10. Optionally, you can garnish it with sliced spring onions and sesame seeds. Here, you can also add more soy sauce or preferred condiments and enjoy!
