Chicken Fried Rice
A one-pot dish that is perfect for lazy days when you don’t want to take out the chopping board or wash a pile of dishes!

Ingredients
- Long grain or basmati rice
- Chicken breast
- Medium onion - diced
- Cooking oil
- Soy sauce
- Honey
- Frozen vegetable mix and fresh tomatoes
- 2-3 medium eggs - beaten
- Seasonings: garlic powder, onion powder, paprika, tumeric, chilli flakes and salt
- Optional garnish: spring onions and sesame seeds
Method
- Prepare your rice as per the packet instructions.
- Chop up your chicken into small pieces and season it with 1 teaspoon each of the following: garlic powder, onion powder, paprika and tumeric. Add salt and pepper to taste.
- Cook the chicken in a frying pan till it is cooked through. Once it's cooked, remove it from the pan and put it to one side for later.
- Add 1 teaspoon of oil to the pan and add the diced onion. Fry it until it is translucent.
- Next, add your frozen mixed vegetables and two chopped-up tomatoes. Season the vegetables with 1 tablespoon of soy sauce, 1 tablespoon of honey and one teaspoon each of chilli flakes and garlic powder.
- Once the vegetables are almost cooked, use a spatula to move the vegetables to one side of the pan and add 2-3 beaten eggs to the empty space made in the pan. Scramble the eggs till they are cooked.
- Once your rice is cooled, you're ready to assemble the rice!
- Combine the cooked chicken into the vegetable and egg mixture to ensure everything is heated through.
- Once the vegetables, egg and chicken are combined, slowly add the rice and stir till all the rice is mixed in.
- Optionally, you can garnish it with sliced spring onions and sesame seeds. Here, you can also add more soy sauce or preferred condiments and enjoy!
