Ingredients

  • 300g assorted chocolate bars broken into pieces (I used dark chocolate, milk chocolate, raisin and nut chocolate)
  • 30g unsalted butter
  • 250ml double cream
  • Pinch of salt
  • 100g chopped mixed nuts

Method

  1. Bring a little water to a simmer in a pan. Place the chocolate and butter in a large heatproof bowl over the water (do not allow the base of the bowl to touch the water). Stir until melted and glossy.
  2. Heat the cream in a separate saucepan until almost boiling (but do not allow the cream to reach a boil). Remove the pan from the head and allow it to cool for 5 minutes.
  3. Pour the warm cream over the melted chocolate and mix until smooth and well combined. Stir in a pinch of salt.
  4. Line a roasting tray with greaseproof paper and pour in the melted chocolate and cream mixture. Set aside to cool, then chill in the fridge until set.
  5. Once the chocolate mixture has cooled and set, sprinkle the chopped nuts onto a baking tray.
  6. Scoop out small portions of the chilled chocolate mixture with a teaspoon, then roll them into balls with your hands. Roll each ball in the chopped nuts until completely coated. Place the truffles onto a baking tray or plate and chill until ready to serve. The truffles will keep for 1-2 weeks in an airtight container.
  7. These make a delicious gift for your friends or family.
