Easter Bunny Cake

Something sweet that is great for sharing with friends and family for Easter. It is a lot of fun to decorate, and you can be very creative with it.

Ingredients

  • A box cake mix of your choice (and required ingredients, e.g. eggs, water, vegetable oil)
  • Any frosting of your choice
  • Desiccated coconut
  • Optional: chocolate for decoration, red/pink food colouring

Method

  1. Use the instructions from the cake mix (e.g. add eggs, water, and vegetable oil as instructed) to bake 2 round cakes. The cakes are ready when a toothpick inserted in the centre comes out clean.
  2. Cool the cakes in the pan for 15 minutes, then cool on a wire rack completely for about another 20 minutes.
  3. Place one cake on a serving tray as the bunny’s head.
  4. Cut 2 convex-shaped ears from each side of the second cake, and place them on each side of the head to form ears. Place the remaining concave-shaped piece below the head for the bowtie.
  5. Frost the entire bunny cake with frosting, and sprinkle the desiccated coconut evenly over the top.
  6. Decorate the bunny’s face with some chocolate. Make ears and bowtie with red/pink food colouring and some extra coconut.
