Ingredients

  • 3 servings of egg noodles
  • 600g chicken
  • 3 peppers (red/yellow work best)
  • Soy sauce
  • Oyster sauce
  • Corn flour
  • Baking soda
  • Garlic paste
  • Ginger paste
  • Vegetable oil
  • Sugar
  • Chicken stock cube

Method

  1. Make a marinade with the following ingredients:
    • 1 tablespoon of soy sauce
    • 1 teaspoon of oyster sauce
    • 1 teaspoon of corn flour
    • 1/2 teaspoon of baking soda
    • 1 teaspoon of garlic paste
    • 1 teaspoon of ginger paste
    • 1 teaspoon of oil
  2. Pour the marinade over the chicken and let it rest for 30 minutes.
  3. Whilst the chicken is marinating, make the sauce by adding the following to a bowl and mix together well:
    • 1 teaspoon of sugar
    • 1/2 chicken stock cube
    • 4 tablespoons of soy sauce
    • 2 tablespoons of oyster sauce
    • 1 teaspoon of garlic paste
    • 1 teaspoon of ginger pate
    • 2 tablespoons of water
  4. Once the chicken is marinated, heat oil in a large pan or wok over medium-high heat and add the chicken in a single layer. Cook undisturbed on one side before stirring to cook through. Remove and set aside.
  5. Add the bell peppers to the pan, deglazing with a splash of water, and sauté until softened.
  6. In the meantime, boil the noodles according to the package instructions. Drain and rinse with cold water and set aside.
  7. Once the peppers soften, return the chicken to the pan, add noodles, and pour in the sauce. Toss everything together over medium heat for a few more minutes until well coated.
  8. Serve and enjoy your homemade Lo Mein!
