Mexican Tacos

This recipe produced a flavourful taco filling with fresh, balanced accompaniments. The citrus, spices and pickled onion added brightness, while the guacamole complemented the richness of the meat.

Ingredients

  • 500g beef mince
  • 1 white onion (finely diced)
  • Juice of one orange
  • Juice of one lime
  • Juice of 1/2 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

To serve

  • Soft tortillas
  • Sliced jalapenos
  • Grated cheddar cheese
  • Lime Wedges
  • Guacamole
  • Pickled red onion

Method

  1. Heat the olive oil in a large frying pan over a medium heat.
  2. Add the diced white onion and cook for 3-4 minutes until softened.
  3. Add the beef mince and cook until browned, breaking it up with a spoon.
  4. Stir in the orange juice, lime juice, lemon juice, white wine vinegar, oregano, cumin and paprika.
  5. Season with salt and pepper, reduce the heat slightly, and simmer for 10-15 minutes until the liquid reduces and the mince is well coated in the sauce. Taste and adjust seasoning if needed.
  6. Warm the soft tortillas in a dry pan or oven.
  7. Spoon guacamole onto each tortilla.
  8. Top with spiced beef mince and add the jalapeƱos and cheese.
  9. Finish with pickled onions and serve with lime wedges to squeeze over before eating.
