Mexican Tacos
This recipe produced a flavourful taco filling with fresh, balanced accompaniments. The citrus, spices and pickled onion added brightness, while the guacamole complemented the richness of the meat.

Ingredients
- 500g beef mince
- 1 white onion (finely diced)
- Juice of one orange
- Juice of one lime
- Juice of 1/2 lemon
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
To serve
- Soft tortillas
- Sliced jalapenos
- Grated cheddar cheese
- Lime Wedges
- Guacamole
- Pickled red onion
Method
- Heat the olive oil in a large frying pan over a medium heat.
- Add the diced white onion and cook for 3-4 minutes until softened.
- Add the beef mince and cook until browned, breaking it up with a spoon.
- Stir in the orange juice, lime juice, lemon juice, white wine vinegar, oregano, cumin and paprika.
- Season with salt and pepper, reduce the heat slightly, and simmer for 10-15 minutes until the liquid reduces and the mince is well coated in the sauce. Taste and adjust seasoning if needed.
- Warm the soft tortillas in a dry pan or oven.
- Spoon guacamole onto each tortilla.
- Top with spiced beef mince and add the jalapeƱos and cheese.
- Finish with pickled onions and serve with lime wedges to squeeze over before eating.
