Ingredients
- 1 large egg
- 100g brown sugar
- 75g white sugar
- 125g unsalted butter, softened
- 1 pack of mini eggs (80g)
- 1 teaspoon vanilla extract
- 150g plain flour
- 110g self-raising flour
- 100g chocolate chunks or chips (white, milk or dark)
Method
- In a mixing bowl, combine the softened butter, brown sugar, and white sugar.
- Add the egg and vanilla extract, whisking until fully combined.
- Sift in both flours and mix until a dough forms.
- Fold in the chocolate chunks or chips (I used dark chocolate chunks).
- Divide the dough into 12 equal portions, rolling each into a ball. Place them on a lined baking tray, ensuring they are well spaced.
- Bake at 180°C for 10-12 minutes.
- Remove from the oven and gently press mini eggs into the cookies while they’re still warm and soft.
- Allow the cookies to cool completely before enjoying your chunky, chocolatey Easter treats!
