Peanut Butter Stuffed Dates

With only three ingredients these tasty treats are easy to make! The peanut butter can be swapped for any nut butter of your choice, and vegan chocolate can be used to make these plant-based treats.

Ingredients

  • Medjool dates (or any dates you prefer, and any quantity you desire)
  • Chocolate of your choice (milk or dark is recommended)
  • Peanut butter (crunchy or smooth - that's your choice!)

Method

  1. Start by slicing a small line down one side of your dates and opening them up to expose the centre and remove the stone from inside the date

  2. Now very carefully stuff the centre of the dates with a little bit of peanut butter until the centre is filled

  3. Once you’ve repeated this on all the dates, put them on a freezer-safe plate or tray and put them in the freezer to set for 30 minutes

  4. To melt your chocolate, use the double-boil method (as this reduces your chances of burning the chocolate). This is achieved by using a saucepan of boiling water and placing a glass bowl on top.

  5. Break your chocolate into pieces and put it into the glass bowl. Slowly mix until it is fully melted.

  6. Remove the saucepan from the heat, but keep the glass bowl over the saucepan

  7. Remove your dates from the freezer. Drop each of your stuffed dates into the chocolate until they are fully coated. Return them to the tray they were originally on. Repeat this for every date.

  8. Put the chocolate covered date into the fridge to set for 2 hours

  9. Now they are ready to enjoy! Store them in the fridge for ultimate enjoyment!
