Quesadillas
Refried Bean Quesadillas
This budget-friendly recipe is vegetarian, but there are options to include meat. Recipe makes 2-3 quesadillas.

Ingredients
- 2-3 tortillas
- 1 tin of kidney beans (drained and mashed)
- 50-75g grated cheese
- 1/2 small onion, finely diced (use frozen diced for lower cost!)
- 1/2 pepper, diced
- 1 teaspoon oil or butter
- Salt and pepper
- Seasonings: garlic powder, paprika, chilli flakes, coriander
- Optional: sour cream and guacamole
Method
- Heat oil in a frying pan, then fry the onion and pepper for 3-5 mins until soft.
- Stir in the mashed kidney beans and season. Cook for 2-3 minutes until warm and slightly thick.
- Put a tortilla in a clean pan (on medium heat). Spread the bean mix over half, then sprinkle cheese on top. Fold the tortilla over.
- Fry for 2-3 mins each side until golden and crispy. Press down slightly with a spatula so it sticks together.
- Serve up with a sprinkle of coriander on top! Tastes great with guacamole and sour cream.
Optional Meat Add-On
You can add this to the bean mix or replace the beans:
Option 1 - Chicken
- Use leftover cooked chicken or cheap pre-cooked pieces
- OR fry diced chicken with salt, pepper and paprika until cooked through
Option 2 - Mince (beef or turkey)
- Cook 100g mince in a pan, and add salt, pepper, paprika and garlic powder
- Mix it into the beans or layer it on top before adding cheese
