Recipe by Abi Pearce

Ingredients

  • 2-3 tortillas
  • 1 tin of kidney beans (drained and mashed)
  • 50-75g grated cheese
  • 1/2 small onion, finely diced (use frozen diced for lower cost!)
  • 1/2 pepper, diced
  • 1 teaspoon oil or butter
  • Salt and pepper
  • Seasonings: garlic powder, paprika, chilli flakes, coriander
  • Optional: sour cream and guacamole

Method

  1. Heat oil in a frying pan, then fry the onion and pepper for 3-5 mins until soft.
  2. Stir in the mashed kidney beans and season. Cook for 2-3 minutes until warm and slightly thick.
  3. Put a tortilla in a clean pan (on medium heat). Spread the bean mix over half, then sprinkle cheese on top. Fold the tortilla over.
  4. Fry for 2-3 mins each side until golden and crispy. Press down slightly with a spatula so it sticks together.
  5. Serve up with a sprinkle of coriander on top! Tastes great with guacamole and sour cream.

Optional Meat Add-On

You can add this to the bean mix or replace the beans:

Option 1 - Chicken

  • Use leftover cooked chicken or cheap pre-cooked pieces
  • OR fry diced chicken with salt, pepper and paprika until cooked through

Option 2 - Mince (beef or turkey)

  • Cook 100g mince in a pan, and add salt, pepper, paprika and garlic powder
  • Mix it into the beans or layer it on top before adding cheese
