Rou Jai Mo

Rou Jia Mo (Shaanxi-Style Burger)

This traditional Shaanxi snack takes some time to cook but is a tasty treat!

Ingredients

  • 500g pork belly (cut into chunks)
  • 1 tablespoon vegetable oil
  • 3-4 slices of ginger
  • 2 cloves of garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon cooking wine
  • 1 piece of star anise
  • 1 small cinnamon stick (or 1/2 teaspoon ground cinnamon)
  • 1 bay leaf
  • 1 tablespoon sugar
  • 250g plain flour
  • 150ml water
  • 1/2 teaspoon baking powder
  • Pinch of salt

Method

  1. Prepare the Filling: - Heat oil in a pot over medium heat. Add ginger and garlic, stir-frying until fragrant. Add pork chunks and brown evenly. Add soy sauces, cooking wine, star anise, cinnamon, bay leaf, sugar, and enough water to cover the pork. Simmer on low heat for 1-2 hours until tender. Season with salt and shred the meat.
  2. Prepare the Buns: - Mix flour, baking powder, salt, and water. Knead until smooth, then let rest for 15 minutes. Divide the dough into 6 equal portions, roll each into a small bun, and press flat. In a dry skillet over medium heat, cook each bun for 3-4 minutes on each side, or until golden and cooked through.
  3. Assemble: - Slice the bun open halfway and fill with the shredded pork. Serve hot!
