Spinach and Pepper Pasta

Spinach and Pepper Vegetarian Pasta

If you're in a rush, this recipe is quick, cheap and filling! It's also versatile, as you can add your own favourite ingredients to mix it up.

Ingredients

  • 3 peppers (any colour)
  • 3 handfuls of baby spinach
  • 1 tablespoon of garlic paste
  • 1 tablespoon of onion paste
  • Basil leaves
  • 3 servings of pasta of your choice
  • 3-5 tablespoons of yoghurt/cream cheese (use plant-based to make this recipe vegan)
  • Salt, pepper and other seasonings of choice (I recommend chilli flakes, oregano, and parsley)

Method

  1. Roughly chop your peppers into a few pieces (doesn’t have to be small pieces) and lay them on a baking tray. Drizzle generously with olive oil and sprinkle with a healthy dose of salt. Throw it in a preheated over at 200 degrees till the vegetable forms a charred skin.

  2. Boil your pasta in heavily salted water in the meantime and set aside.

  3. When the peppers are ready, blend them with the spinach, basil, and some water until smooth. Add more water or spinach leaves to adjust the thickness of the sauce. Note that it can be slightly watery at this point.

  4. Now, pour in your sauce and pasta together in a pot over medium flame. Mix in the yogurt/ cream cheese, garlic and onion paste, salt, pepper and any other seasonings at this stage. Mix well for a few minutes and its done!

  5. Serve fresh or store in the fridge as meal prep and enjoy your healthy vegetarian pasta! You can even add in mushroom/chicken/shrimp and make it your own!
