Spinach and Pepper Pasta
If you're in a rush this recipe is quick, cheap and filling! It's also versatile as you can add your own favourite ingredients to mix it up.

Ingredients
- Pasta (any shape)
- 2 Peppers (any colour)
- 1 tablespoon of garlic paste
- 1 tablespoon of onion paste
- A few fresh basil leaves
- 3-5 tablespoons of yoghurt/cream cheese
- Salt, pepper and any other seasonings of choice (I recommend chilli flakes, oregano, and parsley)
Method

Roughly chop your peppers into pieces (they don't have to be small) and lay them on a baking tray. Drizzle generously with olive oil and sprinkle with a healthy dose of salt. Put it in a preheated oven at 200 degrees till the peppers form a charred skin.
- Boil your pasta in heavily salted water as per the packet instructions. Once cooked, set aside

When the peppers are ready, blend them with the spinach, basil, and some water until smooth. Add more water or spinach leaves to adjust the thickness of the sauce. Note that it can be slightly watery at this point.
- Next, put your sauce and cooked pasta into a saucepan over medium heat. Mix in the yoghurt/cream cheese, garlic paste, onion paste, salt pepper and any other seasonings you want to use. Mix well for a few minutes and it's done!
- Serve fresh or store in the fridge as meal prep, and enjoy your healthy vegetarian pasta. You can even add mushrooms, chicken, or shrimp to make it your own!
