Toad in the Hole

This is an straightforward dish to make for the cold winter nights. As this recipe makes four portions, you can freeze some for an easy dinner later!

Ingredients

  • 140g plain flour
  • 4 large eggs
  • 200ml milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons sunflower oil
  • 8 sausages (good quality Cumberland sausages work the best!)

Method

  1. In a mixing bowl, whisk together the flour, salt and pepper. Add the eggs and half the milk, whisk until smooth. Add the remaining milk and 1 tablespoon of oil, and whisk again until lump-free.
  2. Let the batter rest for at least 30 minutes – the longer, the better!
  3. Preheat your oven to 220°C (200°C fan).
  4. Add 1-2 tablespoons of oil to a medium roasting tin. Put the sausages in the tin and place it in the oven for 10-12 minutes, turning once, until they start to brown and the oil is very hot.
  5. Remove the hot tin from the oven quickly but safely. Pour the batter around the sausages – it should sizzle immediately. Return the tin to the oven without delay.
  6. Bake for 25-30 minutes until the batter has risen and turned deep golden and crisp. Make sure you don’t open the oven during this time – it will prevent your batter from rising!
  7. Serve with mash (see Cooking Basics - Mashed PotatoesLink opens in a new window), peas and gravy! If you’re freezing the portions, allow the cut portions to cool completely before wrapping in cling film. Eat within 2-3 months.
