Veg Traybake
This is an easy dish to learn, just chop and cook! Batch cook to make dinners easy.

Ingredients
- Broccoli
- Potatoes
- Carrots
- Salt and pepper to taste
- Mixed herbs
- Oil
Method
- Pre-heat the oven to 180 °C on the fan setting or 200 °C without
- Chop up the vegetables to the size of your liking (different types of vegetables must be cut to different sizes to finish cooking at the same time)
- Douse in oil (olive oil works best, but can be substituted with vegetable oil)
- Season with salt & pepper and mixed herbs to taste
- Mix with hands until oil and seasonings have thoroughly dispersed and add to a baking tray.
- Cook for around 30 minutes in the oven. After 20 minutes, take the tray out and mix the vegetables again. Put in the oven again until they have slightly browned. When it's done, dish up and serve!
Notes
- You can try this with any type of vegetables that stay firm after cooking, for example, corn, tomatoes, and peppers. Experiment with your favourites!
- This is great to batch cook. Add your protein of choice, and this makes an easy few days of dinners.
