Vegan Rice Paper Rolls

These tasty rolls make a great and tasty lunch, and as they're vegan, they are perfect if you are doing Veganuary!

Ingredients

  • Rice Paper
  • Salad mix with shredded and crunchy (I used Tesco sweet salad mix containing cabbage, carrots, and lettuce)
  • Tofu
  • 1 Avocado
  • 2 tablespoons dark soy sauce
  • 1 teaspoon sugar
  • Corn flour
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 spring onion (Optional)
  • Salt and pepper

Method

  1. Cut the tofu into rectangle strips and lightly dust a thin coating of corn flour on both sides.
  2. Combine the soy sauce, sugar, and a sprinkle of corn flour (to thicken) for the sauce. Add salt, pepper, the ginger paste, and the garlic paste.. Mix the flour thoroughly at this stage to avoid clumps. Lastly, add in enough water to help cover the amount of tofu strips you are preparing.
  3. Now, fry your tofu strips with a little oil over medium heat until slightly browned on both sides.
  4. Add the sauce to the pan, covering all the tofu. After 5 minutes, turn off the heat and, if using, toss in chopped spring onions.
  5. During these 5 minutes, prepare the avocado by thinly slicing it.
  6. To prepare the rice papers, dunk them in lukewarm water and lay them flat on a wet plate.
  7. For the assembly, lay 1 strip of tofu along with some of the sauce on top of one of the rice papers. Top with 1 or 2 slices of avocado and, lastly, some of your salad mix.
  8. Wrap the rice paper as you would a burrito (this may take a few tries to get right).
  9. Optionally, you can fry the rolls in some oil (it tastes better if it is sesame or chilli oil).
  10. Serve with some vegan dipping sauce, and enjoy!
