Our head of food, Mark Ralph, has shared his recommendations for the best pancake mix for different dietary requirements. Whatever your preference or dietary requirement we have something for everyone.

Serves 4-5

Ingredients:

100g plain flour

300ml milk

2 eggs

Salt pinch

Oil splash

Non-gluten ingredients:

100g NGCI plain flour

300ml milk

2 eggs

Salt pinch

Oil splash

Vegan ingredients:

100g plain flour

300ml almond milk

2 tsp egg replacer mixed with 2 tbsp water

Salt pinch

Oil splash

Vegan non-gluten ingredients:

100g NGCI plain flour

300ml almond milk

2 tsp egg replacer mixed with 2 tbsp water

Salt pinch

Oil splash

Equipment:

  • Whisk
  • Bowl
  • Medium frying pan

Method

  1. Whisk all the ingredients together.
  2. Let the mixture stand for 30 minutes.
  3. Heat pan and fry a scoop of mixture for 2 minutes.
  4. Turn and fry for 1 minute until nicely browned.

Serving suggestion

Serve with your favourite savoury or sweet topping!
