Teaching in Enzyme Chemistry

While there are many undergraduate texts which cover enzyme action from a biological perspective, there are few which cover the organic chemistry of enzyme action. This prompted me to write an undergraduate text:

"An Introduction to Enzyme and Coenzyme Chemistry" (Blackwell Science)

For students interested in a practical demonstration of enzyme catalysis, you may be interested in an undergraduate experiment which I initiated a few years ago, concerning an esterase enzyme activity found in orange peel.

"Regiospecific Ester Hydrolysis By Orange Peel Esterase - An Undergraduate Experiment", T.D.H. Bugg, A.M. Lewin, and E.R. Catlin, J. Chem. Educ., 74, 105-107 (1997).
